Butter Chicken with Spinach and Chickpeas

Ingredients

  • 1 packet Asian Home Gourmet Butter Chicken Spice Paste
  • 500g chicken breast, but into bite sized pieces
  • 1 onion, chopped
  • 1/2 cup tomato purée
  • 1/2 cup water
  • 1/2 cup coconut milk
  • 3 tbsp melted butter
  • 1 cup basmati rice

Instructions

  • Cook rice according to packet instructions.
  • Heat the butter in a large pan on medium high heat, add onions and sauté for a minute before adding the chicken pieces to brown.
  • Stir in tomato purée, water, coconut milk and spice paste. Add the spinach and chickpeas to the pan for the last 5 minutes of cooking time.
  • Simmer uncovered for about 20 minutes.
  • Serve with Basmati rice.
