Chinese Five Spice Chicken with Stir Fried Vegetables

Give your usual roast chicken pieces a wake up call with the tangy Asian flavour of Chinese 5 spice.

Served with crunchy, colourful fresh vegetables and Basmati rice it’s a nutritious weeknight meal that’s ready in no time. I must honestly say that chopping vegetables relaxes me so I don’t mind chopping up carrots, peppers, cabbage and whatever else I can find to chop. I suppose if you were really pressed for time you could buy precut veggies but remember that they are more costly and they do lose some nutritional value through the processing and packaging. My advice for vegetables is to always buy them as close as possible to their natural form, wash them well and take the time to prepare them. There’s something to be said for the “slow food” movement. Spend time with your veggies! 🙂

Chinese Five Spice Chicken with Stir Fried Vegetables

Gluten free, sugar free, dairy free.


  • 6-8 chicken thighs
  • 2 tsp crushed garlic
  • 3 tsp chinese 5 spice
  • 2 tbsp peanut oil/sesame oil
  • 2 tbsp soy sauce
  • 1 onion
  • 1 cup uncooked basmati rice
  • stir fry vegetables


  • There's a long way and a short way to cooking this chicken... Mine is the short way but I will note down the long way as well.
  • Cook the basmati rice according to packet instructions.
  • Spray a glass oven dish with olive oil spray and lay the chicken thighs out in the dish. Drizzle with peanut oil, soy sauce and crushed garlic. Sprinkle the Chinese Five Spice over the chicken and using your hands, rub the resulting mixture onto the chicken pieces, ensuring that they are covered all over.
  • For the long way, it's suggested that you marinate the chicken in the mixture overnight or for a couple of hours.
  • Chop the onion into eighths and add to the chicken dish. Place chicken into the oven to bake at 200 C for 25-30 minutes or until cooked through.
  • Chop up your choice of stir fry vegetables, stir fry in a large pan or work over high heat with a little peanut oil. Perfectly stir fried vegetables will be bright in colour and still a bit crunchy.
  • Season vegetables with a little soy sauce while cooking, if desired.
