Egg, Bacon & Asparagus Salad with Dijon Vinaigrette

Ingredients

  • 4 large boiled eggs, peeled and sliced
  • 5 cups chopped asparagus
  • 6-8 slices cooked and diced bacon
  • 2 tsp Dijon mustard
  • 4 tsp extra virgin olive oil
  • 4 tsp red wine vinegar
  • salt & pepper to taste

Instructions

  • Bring a pot of water to boil, add the asparagus and cook for 2-3 minutes until tender but still firm.
  • Drain and rinse under cold water to stop it from cooking further. Set aside.
  • In a small bowl, mix Dijon mustard, oil, vinegar together and season with salt and pepper.
  • Arrange the asparagus on a plate, top with egg and bacon and drizzle with the vinaigrette.
