Grilled Corn & Quinoa Salad with Mango

Grilled Corn & Quinoa Salad with Mango


  • 1 cup quinoa
  • 1 ripe mango
  • 1 ripe avocado
  • 300 g ripe mixed cherry tomatoes
  • 2 limes
  • extra virgin olive oil
  • 2 corn on the cob
  • 2 tsp crushed garlic
  • 4 rashers smoked streaky bacon
  • 1 fresh red chilli
  • 30 g feta cheese
  • 15 g fresh coriander


  • Cook the quinoa according to packet instructions, then drain.
  • Peel and destone the mango and avocado, then roughly chop.
  • Quarter the tomatoes and add to the mango and avo, then toss with the lime zest and juice, 2 tbsp extra virgin olive oil and pinch of salt and black pepper.
  • Leave to stand while grilling the corn cobs on a hot griddle pan/electric grill until nicely charred, then slice off the kernels.
  • Deseed the chilli and slice.
  • Slice the bacon.
  • Add chilli, bacon and garlic to a small frying pan on medium heat with 1 tsp olive oil.
  • Cook, stirring until lightly golden.
  • Add to the bowl of vegetables, add the quinoa and corn and toss all together, then season to taste.
  • Divide between plates, crumble over the feta, sprinkle with fresh herbs and serve.
