Grilled Lemon & Herb Mediterranean Chicken Salad


  • 2 tbsp olive oil
  • juice of 1 lemon (1/4 cup)
  • 2 tbsp water
  • 2 tbsp red wine vinegar
  • 2 tbsp fresh chopped parsley
  • 2 tsp dried basil
  • 2 tsp crushed garlic
  • 1 tsp dried oregano
  • sea salt & black pepper to taste
  • 4 skinless, deboned chicken thighs OR chicken breasts
  • 4 cups washed and dried cos lettuce leaves
  • 1 cucumber, diced
  • 2 Roma tomatoes, diced
  • 1 red onion, finely sliced
  • 1 avocado, sliced
  • 1/3 cup pitted Kalamata olives, sliced
  • lemon wedges
  • 1/2 cup crumbled feta


  • Whisk together all the dressing ingredients in a large jog.
  • Pour out half the dressing into a large, shallow dish.
  • Refrigerate the remainder to use later.
  • Add the chicken to the dressing/marinade in the dish; marinade for 15-30 minutes.
  • While waiting for the chicken, prepare all the salad ingredients and mix in a large salad bowl.
  • Once chicken is ready, heat 1 tbsp olive oil in a griddle pan or electric grill over med-high heat.
  • Grill chicken on both sides until browned and cooked through.
  • Allow chicken to rest for 5 minutes, slice and arrange over the salad.
  • Drizzle salad with the remaining dressing from the fridge. Crumble feta cheese over and serve with lemon wedges.
