Quick & Easy Dinner Ideas that Your Family Will Love

Where to find inspiration?

Our quick and easy meal plan for last week was really made up by the scruff of it’s pants! It did still come out very well but I have to say that with the weather being as odd as it has been the last few weeks, I found it quite hard to come up with inspiration. When it’s hot and sunny I would think of fresh and summery ideas. When it’s cold I would go for warm comfort food. I pushed through though and went mostly on what I had around the house already.

It was also SuperDad’s birthday and the guest of honour gets to choose whatever they want for dinner. He gave his vote to Blake, who decided on chicken leg and potatoes. Mamma played with the idea and waved my little wand (spoon) to come up with the week’s most popular recipe, which was grilled chicken and smashed potato salad. It received a big thumbs up from this adorable little boy, whose mommy sent me these gorgeous pictures of him absolutely loving his meal.

I have to add that we are all raving about his awesome Lego eating set! If you want to rush out and get yourself one, head over to Makro. I couldn’t find it online, but they can be found in store. Certain items also available at TakeAlot. The range is from Placematix and comes with cutlery as well.

Easy as Pie… so to speak

I find pie quite daunting to make, actually. In any case, my recipes must always be easy and quick to make so that’s where I start when looking for ideas. It does narrow things down.

Time seems to be absolutely spinning past us and these past weeks have gone by in a blur. I have been so super busy between business and blog (definitely not complaining) that when I find a spare moment it’s gold, it’s so precious and I wouldn’t waste it on negativity.

Yet, I see people who still manage to complain about anything and everything. Do they not see that by focusing on all the negativity, they are creating more negativity in their own lives? Try, for just one day, not to complain and instead find something positive to focus on. See how it changes your perspective and even your reality.

Chicken fillet burgers

Crumbed Chicken Fillet Burgers with Healthy Stuff

I am half ashamed and half proud to say that I forgot that I wanted to bake some oven chips with our burgers, so it turned out to be quite a healthy burger dinner indeed!

I also confess that it would have looked better with white cheese, but in true Mamma style, I didn’t have any so I used regular ol’ yellow cheddar cheese and it was equally delicious, if not as pretty! Re-emphasising that this is MammaChef and not MasterChef! HashtagMommyCookingBlog!


Crispy, crumbed chicken breast fillets from Woolies, topped with cheddar cheese, melted in the oven. Served on a fresh bread roll with butter lettuce, dijon mustard and caramelised onions.

Our sides were coleslaw and a very healthy and refreshing salad of cucumber, cherry tomatoes, basil, chickpeas and avo.

Happy, happy little bodies and full tummies all around!

 

Pan seared fish with tomato white wine & basil

Fresh Hake in a bright sauce, full of flavour

This dinner idea was inspired by a recipe found on Pinterest, which I played with a bit as usual and ended up with the below. I must add that the smells while cooking were amazing and just added to the anticipation of the dining.

Recipe:

Preheat oven to 190 degrees C.

Heat a little olive oil in a pan over medium heat. Depending on children and/or taste, add a small sprinkle (up to half a tsp) of red chilli flakes and 1tsp crushed garlic. Sauté for a minute.

Add a tin of chopped tomatoes and a few halved cherry tomatoes and cook for about 10 minutes. Add in a quarter cup of dry white wine and let the mixture simmer.

Add half a cup of finely chopped fresh basil, 2 tbsp freshly squeezed lemon juice, a quarter tsp lemon zest, ground salt and black pepper and cook for 2 more minutes. Then transfer into a bowl and set aside.

Season portions of fresh skinless hake on both sides with salt and pepper. Heat a little olive oil in a large oven proof non stick pan over medium high heat. Place the hake in the oil until golden brown, approximately 6 minutes. Carefully turn the hake over, pour over the wine and tomato sauce and place in the oven for a further 5-10 minutes or until cooked through.

While the fish is cooking in the oven, mix 1,5 cups couscous and 1,5 cups of boiling water in a bowl. Add 1 Knorr vegetable stock pot and a dash of olive oil. Mix well and cover with cling wrap or a plate. Wait 3-4 minutes before fluffing with a fork.

Serve (with some of that crisp white wine) and enjoy!


This fish comes out super soft and breaks apart very easily, so be prepared for not having perfectly beautiful golden fillets. It really is delicious though!

This recipe could be a side with so many things! So yummy looking, yummy tasting and cleverly carb conscious too!

Zucchini Mushrooms

1 small packet of Zucchini. Cut into thickish slices.

1 small packet of mushrooms (you can also use brown mushrooms for a more earthy taste). Cut in half.

One pan/pot for the Zucchini’s, one pan/pot for the mushrooms. You can use one pot but mushrooms tend to become very watery and the Zucchini don’t like to swim 😉.

Pan fry lightly in butter until al dente (You don’t want it to get soggy). Add a bit of salt & pepper and oregano flakes while frying.

Remove from pan and let cool for a bit in a glass bowl.

Once cooled, crumble some Feta cheese and sprinkle with a little bit of WOOLWORTHS SA Nut & Seed Sprinkles. You can use any other nuts as well.

You can also drizzle with olive oil if you want.

You can eat it as is, on a #meatfree day or have it as a side dish.

This week’s meal plan is still a secret… even from me, to be quite honest! I just haven’t had time to sit down and do the planning. Although I do have a few ideas bubbling in my brain.

Pulled chicken wraps with all the trimmings

SuperDad does dinner

Last night turned into a switcheroo as Dad was working slightly late, leaving me on soccer duty and SuperDad on chef duty.

He seems to have the equivalent of “green fingers” in the kitchen. He doesn’t cook often but when he does, it’s always a big hit!

I did have something quick and easy planned as soccer nights leave very little time for cooking, so you could say he was set up for success. Enter Woolies Pulled Chicken with every colour of the rainbow that you could possibly fit into a wrap!

Seriously, when you arrive home in the dark and very close to frozen, to a poured glass of wine and a table set with a picture like this you can’t help but glow with happiness!


Each person got to put together their own wrap with choice of fillings, toppings and sauces, which is always fun for the kids. Besides the vegetables we also added homemade guacamole, humus, jalapeños…

The chicken is so tasty that it barely needs any of the extras, but it does look fantastic!
