Flop Proof Cottage Pie

Ingredients

  • 6 potatoes
  • 1 onion chopped
  • 1-2 tsp crushed garlic
  • 2 tbsp flour
  • 300 ml beef stock
  • 1 kg beef mince
  • 1 tsp dried thyme
  • 1-2 cups frozen mixed vegetables
  • 250 g cheddar cheese grated
  • 1 tbsp butter
  • paprika
  • 1 tsp hot English mustard

Instructions

  1. Peel potatoes and cut into quarters. Place in a pot with cold, salted water.

  2. Bring to boil and cook for 15 minutes or until soft.

  3. Fry chopped onion and crushed garlic in olive oil over medium heat until translucent.

  4. Add flour and fry for 2 min, stirring often.

  5.  Add beef stock, stirring it in little by little until you have a smooth consistency.

  6. Add mince, season with salt, black pepper & thyme.

  7.  Cook, stirring occasionally, until the mince is evenly browned.

  8. Add mixed vegetables, lower heat, cover and simmer for about 10 minutes. Empty into oven dish.

  9. When potatoes have cooked, drain and place back in pot. Add butter, 200g cheese, teaspoon of mustard and teaspoon of paprika. Season with salt to taste and mash until smooth.

  10. Spoon the mash on top of mince and spread evenly. Sprinkle with the remaining cheese. Grill for 5-10 minutes.

Variations:
Make with sweet potato for a low carb option and/or replace mince with lentils for a delicious vegetarian version!
