Chorizo & Haloumi Platter

Chorizo & Haloumi Platter

Ingredients

  • 500g baby potatoes
  • 1/4 cup olive oil
  • 450g chorizo, cut diagonally into 1cm thick slices
  • 360 g haloumi, thinly sliced
  • 200g marinated olives
  • lemon wedges, to serve
    Tomato and Paprika Sauce
  • 1 tablespoon olive oil
  • 1 brown onion, finely chopped
  • 1 teaspoon paprika
  • 1 teaspoon smoked paprika
  • 2 teaspoons balsamic vinegar
  • 1 teaspoon caster sugar
  • 1 tin chopped tomatoes

Instructions

  • Preheat oven to 220°C. Place potatoes in a small roasting pan. Add 1 tablespoon oil. Season with salt and pepper. Toss to coat. Roast for 40 minutes or until tender.
  • Meanwhile, make tomato and paprika sauce: Heat oil in a saucepan over medium heat. Cook onion, stirring, for 5 minutes or until soft. Add paprika. Cook, stirring, for 30 seconds. Add vinegar, sugar and tomatoes. Season with salt and pepper. Once it starts boiling, reduce heat to medium-low. Simmer, uncovered, for about 15 minutes. Transfer to a bowl.
  • Heat remaining oil in a non-stick frying pan over medium heat. Cook chorizo and haloumi, in batches, for 2 to 3 minutes each side or until browned and crisp. Transfer to a plate lined with kitchen paper.
  • Arrange potatoes, chorizo, haloumi, olives and lemon wedges on a platter. Serve with Tomato and paprika sauce.
