Garlic Butter Chicken and Potatoes – A One Pan Weekday Meal

The less cookware, the less dishes

Of course this is true when you’re cooking, however, one can never have enough pretty cookware in the cupboard! When we’re talking recipes though, less (effort) is more, especially when you’re pressed for time on a busy week day and therefore one pan recipes are always a winner with me.

This super easy chicken and potato one pan dish came about on one of those days when I didn’t have time to plan or shop and I literally had some chicken and some potatoes. What I usually do then is pop on to my favourite recipe sites or Pinterest and find something to cook with those ingredients that I have on hand. This recipe is simple, delicious and quick – in one pan!

Serve with a side salad or steamed vegetables and enjoy!

Even though this recipe had me at “Slow cooker”, I was genuinely, pleasantly surprised at how delicious the meal was.

Coconut Lime Chicken (With Low Carb Cauliflower Rice)

I had seen this coconut lime chicken come across my screen a few times but always kept it on the “to cook sometime” list. Until one day I was looking for something to serve with cauliflower rice and this just seemed to fit perfectly. Since it was summery and hot at the time, Thai inspired coconut and lime chicken sounded light and refreshing. Candlelit dinner on the beach type stuff!
