This Chicken & Spinach Zucchini Lasagne is so mouthwateringly delicious, even though my family are not the greatest zucchini fans they absolutely loved it. How this meal came about was quite a story, I must tell you.

I had vowed not to go to the shops and buy anything extra for dinners (in the name of preparing for the R1k challenge) and I knew that I had chicken breasts, baby spinach and potatoes.
In my sieve of a memory, I recalled seeing a potato and spinach bake on Pinterest and decided to go and look at that again. It didn’t look appealing. High and low I searched for recipes with chicken and spinach and all that came out was pasta, something with cream…. boring.
Since I knew I would be making pasta the next day, I didn’t want another pasta dish. No cream in stock, but I knew I did have ingredients for a bechamel sauce. The search took on a new trajectory…
I then came across a zucchini pasta recipe and hey presto! there was a packet of zucchini in the fridge! Thus, the Zucchini Chicken Spinach Lasagne was born, almost like Frankenstein’s monster… but healthier… and certainly prettier… Maybe this is not a great food analogy.
Moving on!

Now, I must add that you could use cream cheese or ricotta instead of the bechamel, which would make the recipe gluten free. I went with my no shopping rule and had to work with what I had but at the end of the day I only used 60g of white flour and figured there are more dangerous things in the world. Of course, if you are totally gluten intolerant you should use cheese instead.
Also notably economical on chicken breasts, as I only used three. When shredded (or pulled) they really go quite a long way and therefore I had two left over for lunch the next day.
This delicious zucchini lasagne is the perfect dish to pack in loads of vegetables and protein and it’s also great for freezing. I must add that it does take some time to make so either prep and freeze over a weekend, or make it on an afternoon when you have some spare time. It is very much worth the time spent though!

Low Carb Chicken and Spinach Zucchini Lasagne
Ingredients
- 4 medium zucchini
- 1 onion chopped
- 2 tsp crushed garlic minced
- 1 tbsp olive oil
- 3 chicken breasts
- 2 tins peeled & chopped tomatoes
- 2 cups white sauce
- 1 tsp basil
- 1 tsp oregano
- 200 g baby spinach
- 1 cup grated mature cheddar cheese
