Italian Tuna Pasta – A Fast and Fabulous Weeknight Dinner

MammaChef Jozi’s Italian Tuna Pasta

Ingredients

  • 500 g wholewheat penne pasta
  • 1 onion finely chopped
  • 200 g mushrooms sliced
  • 1 tin chopped tomatoes
  • 1 tbsp tomato paste
  • 1/2 cup pitted kalamata olives
  • 2 tins tuna in oil drained
  • tbs fresh parsley chopped

Instructions

  1. Cook penne in salted boiling water according to packet instructions.
  2. Drain, keeping 1/4 cup of the cooking water.
  3. Saute onion with olive oil in a pan over medium heat, cook for 3 minutes. Add a little more oil and mushrooms.
  4. Cook 5 minutes or until golden.
  5. Stir in tomatoes, tomato paste and olives. Simmer on low heat for 5 minutes.
  6. Stir in tuna and chopped parsley. Cook 2 minutes until heated through.
  7. Add salt & black pepper.
  8. Add pasta and cooking water to the tuna mixture and toss to combine.
  9. Serve topped with parsley for garnish.

Recipe Notes

Use gluten free pasta if desired. If tomato is too bitter for kids, add 1 tsp brown sugar for taste. Optional additions: chilli and capers.
